Beet Red Velvet Cupcakes

Yes, you read that correctly; BEET red velvet cupcakes and yes, they are delicious.  Beets have been the one food I’ve had a hard time enjoying.  I’ve taken the occasional bite when paired with goat cheese, but even that has been struggle. What better way to get over my hatred for these extremely nutritious veg than to turn it into a baked good?

Vegetarian Minestrone Soup

It could just be me, but this feels like the coldest Winter we’ve ever had.  Maybe it’s because I semi-recently downsized from a house with a backyard to an apartment without – which means I need to leave my warm, cozy couch to walk my dog in the freezing cold, rather than just let her run around outside.  Or maybe it’s because we’re in the middle of a polar vortex… probably that.  Either way, it’s nice to have an easy, healthy, comforting and hot bowl of soup to come home to after freezing our butts off in the bone-chilling air.  This recipe is my go-to this winter.

Jackfruit Enchiladas

After going vegetarian the last few years, it’s surprising I’ve waited until now to try jackfruit.  While it seems the most common usage for this fruit-with-a-meat-like-texture is pulled ‘pork’ or ‘chicken’ sandwiches, I’m not the biggest fan of BBQ.  That said, I thought enchiladas would be the perfect vehicle to test this vegetarian-friendly fruit. This recipe was such a success, I’m ready to use jackfruit in other scenarios – like buffalo ‘chicken’ dip!

Black Bean Veggie Burgers

This recipe may not be the most photogenic but it’s one of my new favorites.  I would never call myself a vegetarian – because let’s be serious, some meat dishes are too good to pass up – but I’ve been making a conscious effort to eat a primarily vegetarian diet.  That means, lots of veggie burgers!

Spinach & Walnut Pesto

What recipe says ‘Spring’ more than pesto?  Instead of following the typical pesto trio of basil, pine nuts & Parmesan, I wanted to try something new for a couple of reasons.  Firstly, pine nuts are expensive, and secondly, I have a slight goat cheese obsession & needed to work it into this recipe.  I took the healthy route and served this pesto over roasted spaghetti squash instead of actual spaghetti… it did not disappoint!
