Vegetarian Minestrone Soup

It could just be me, but this feels like the coldest Winter we’ve ever had.  Maybe it’s because I semi-recently downsized from a house with a backyard to an apartment without – which means I need to leave my warm, cozy couch to walk my dog in the freezing cold, rather than just let her run around outside.  Or maybe it’s because we’re in the middle of a polar vortex… probably that.  Either way, it’s nice to have an easy, healthy, comforting and hot bowl of soup to come home to after freezing our butts off in the bone-chilling air.  This recipe is my go-to this winter.

Kimchi Fried Rice

I’ve recently taken an interest in keeping my gut healthy.  After spending the majority of my life struggling with unknown GI issues, and more recently constant stomach pain, I’ve learned that I have a very sensitive stomach.  While this isn’t the most exciting topic, I have a feeling most people can relate.  Aside from incorporating probiotic and digestive enzyme supplements into my diet, I’ve also began to cook with some ingredients that naturally include these things – like kimchi.

Black Bean Veggie Burgers

Slow Cooker Chicken Stock

My sister often raves about using her slow cooker to make homemade chicken stock.  As delicious as it sounds, I never thought making stock from scratch would be worth it – since it’s a cheap grocery store item and I never remember to save chicken bones.  As I’ve been cooking with rotisserie chickens quite a bit, I figured it’d be a great time to take advantage of both the bones/carcass and my slow cooker.
