Kimchi Fried Rice

I’ve recently taken an interest in keeping my gut healthy.  After spending the majority of my life struggling with unknown GI issues, and more recently constant stomach pain, I’ve learned that I have a very sensitive stomach.  While this isn’t the most exciting topic, I have a feeling most people can relate.  Aside from incorporating probiotic and digestive enzyme supplements into my diet, I’ve also began to cook with some ingredients that naturally include these things – like kimchi.

Strawberry Rhubarb Jam

My strawberry rhubarb ‘kick’ doesn’t stop at scones… there’s jam, too!  I’d never made jam prior to this but I have to say, I’ll absolutely be making it again.  It’s so rewarding to watch it come together, jar it, then give it as gifts (or gobble all of it up yourself).  On toast, pancakes, waffles, or even with a spoon, this jam is absolutely delicious!

Recently, a friend of mine & I took a cooking class where I was introduced to a strawberry rhubarb upside-down cake recipe.  Believe it or not, this was my first time trying rhubarb, let alone the sweet/sour flavor of strawberry & rhubarb together.  I instantly fell in love & knew I had to create a recipe to showcase this perfect flavor combination.  Scones came to mind, simply because I hadn’t had them in a while & they’re delicious.
